Ingredients: Eggplant

1. Tunisian
   
2. cheese fresh anchovies
4. fresh tomatoes (or peeled)
6. flour egg
8. breadcrumbs oil for frying

Cut the eggplants in the portfolio, leaving the slices attached to two one side. Sauté a bit 'in hot oil, drain and stuff with small pieces of cheese, anchovies and tomato slices. Dip them in flour, then egg and finally in bread crumbs, then fry in hot oil. Serve hot!
